I made these on Saturday, and have been eating them all week. They are so moist and good!

Pumpkin Oatmeal Chocolate Chip Cookies

1 cup butter, softened
1 1/2 cups brown sugar, packed
1 egg
1 tsp vanilla
2 cups whole wheat flour
1 cup quick cooking oats
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground ginger
1 cup canned pumpkin (not pumpkin pie filling, but solid pack pumpkin)
1 1/2 cups chocolate chips

Cream butter and sugar. Beat in egg and vanilla.

In another bowl, combine flour, salt, oats, baking soda, cinnamon, ginger and nutmeg in a separate, large mixing bowl.

Alternate adding the flour mixture and the pumpkin to the wet mixture.

Fold in chocolate chips.

Drop by tablespoon onto greased cookie sheet. Cookies do not spread, so you can space them fairly close together.

Bake at 350 degrees for 13 minutes, or until lightly browned.
