Salty Cracker Pie

20 Saltine crackers, crushed
1 lb Dates, chopped
2 cup chopped Pecans
1 cup Sugar
1 tsp Baking Powder
4 Egg Whites, room temperature
1 tsp Vanilla

Preheat oven to 350. Combine cracker crumbs, dates, sugar and baking powder. Beat egg whites until stiff but not dry and add vanilla. Gently fold dry ingredients into egg whites and pour into a buttered 9" pie pan. Bake at 350 for 30 minutes. Cool and serve with whipped cream. Makes 8 servings.

Meringue for 1 9" pie

1 9" pie, ready for topping
Egg Whites
1 Tbsp cornstarch or powdered sugar

Beat egg whites until stiff. Gradually add sugar and cornstarch. Spread over prepared pie shell. Bake at 350 for about 15 minutes until brown.

Engel, I have NO clue!
There used to be a Luby's Chain in our area & their Cracker Pie was awesome!
Both DH & I always had the pie! :D It was one a person doesn't share!
We've always wanted to have it again, but never find it on anyone's Menu.
This recipe could very well taste a bit like Applie Pie, I don't know, YET! ;)
Reading the ingredients does sound as if it could be quite tasty!

I have a recipe I use, but it's with Ritz Crackers, not like this one at all!

This looks like a good one to print off for future use.

Do any of you have a Recipe for a pie called Millionaire's Pie?
We tasted this one at a Church Lunch years ago, when attending
a family member's funeral service in East Tx.
DH told me to get the recipe. No one remembered it! :duh:
I'm thinking maybe one of you might know & have it!
